Tailgate Recipes

Somebody wanted the recipe for the salad I made for the tailgate (I don’t remember who, but she was a very, very nice lady). It’s extremely easy to make.

Ramen Noodle Slaw

2 packages ramen noodles (I use Oriental Flavor, but use what you want)
1 cup slivered almonds, toasted in about 1 Tbl butter
1 head of cabbage, finely shredded
1 red bell pepper, thinly sliced
2 Tbl sesame seeds, toasted (I buy them already toasted)
6 (more or less) green onions, thinly sliced

Cook noodles. Drain the noodles and rinse with cold water to stop cooking. Don’t add spice packets – save them for the dressing. Mix noodles, almonds, cabbage, red pepper, sesame seeds, and green onions together. Whisk dressing ingredients together, pour over the salad and toss. Chill (the salad) several hours before eating.

Dressing:
Spice packets from noodles
½ cup oil (I use canola)
1/3 cup cider vinegar
4 tsp (more or less) sugar

Oven Temperature: 375 degrees

Recipe:
1/2 C. Butter
1/2 C. Shortening
1 C. Brown sugar
1/2 C. Grantulated Sugar
1/2 Tsp. Baking Soda
2 Eggs
1 Tsp. Vanilla
2 1/2 C. All-purpose Flour
Slightly less than a half a bag of mint chips (or butterscotch chips*)
Slightly less than a half a bag of chocolate chips

Directions (You don't necissarily have to follow them but I personally think they taste better if you do.):
First beat the butter and shortening together. Then add all the sugar and baking soda, blend all that. Then add your eggs and vanilla, mix well. Pour in your 2 1/2 C. flour, mix as much as you can with the mixer on low speed and then use a wooden spoon to stir in the rest. Stir in the chips with the wooden spoon also. Bake each batch for about 8 minutes, or, of course, until golden brown on top.

*You can use whatever kind of chips but this is how I made the butterscotch cookies from 7/23 as well.
