I hope nobody minds the thread derailing. But cakes *are* so interesting.

Yes, there is! You can get a chocolate cake mix and grate up vegetables in the same amount that it asks for oil. Swap the shredded zucchini or whatever instead of oil, and honestly--you'll never notice the difference! This is one trick you really have to try to believe. You have to use chocolate to mask the flavor of the veggies. But if you use chocolate, you won't notice any difference in flavor or texture. Seriously.

But I *still* prefer teh Buttermilk Chocolate cake (full-fat, no veggie version). I'm making one today as a thank you to my pediatrician for watching my twins yesterday. ๐Ÿ˜‰

(Okay, okay... disclaimer. The pediatrician is my neighbor/friend, too.)

Now, why would you prefer the buttermilk version if the veggie version tastes EXACTLY the same. It's seems to me to be a no-brainer. When the healthy version and the not-so-healthy versions taste identical, always go the healthy route.

Is it more of a pain to make or something?

I love making cakes. Does anybody want me to make one for them? It's such a deliciously satisfying hobby. ๐Ÿ˜‰
I have to admit three things:

First: There is no way I'm going to miss the inaugural use of the "Mary Ann" cake pan. I have been dreaming of that moment since History Fair at 2am.

Second: I'll be at Mama Says' house and so will your cake. this is a good thing.

Third: Can I request me a cake tonight and I'll PM with your new "hobby" hours and days in which you will be making cakes for me FOREVER! yummy yum yum. Oh wait... I'll only request cakes at special occasions---> every day. ๐Ÿ˜›

The buttermilk chocolate cake is homemade from a real recipe (ie not "put this bag of stuff in your mixer and throw in water and eggs")

The veggie version is for a cake mix...

And to clarify: veggies instead of oil is as good as any cake mix... BUT... NO cake mix is as good as the homemade buttermilk chocolate recipe, which is in the oven as I type, and smelling so good I'm drooling.

Oh, I'm sorry, I must have wandered into the wrong thread.

Please, continue what you're doing. Don't mind me.

I'll just move very slowly and carefully to the exit.

Please, carry on with whatever it is going on here.

As long as there are samples at the next tailgate, I'm okay with it.
